Okay scratch that those look like shit.

EDIT: Skip to about 26 minutes in
The ones he makes here are way better.
Just season them with salt, pepper, paprika and garlic powder. Add some cream to it as well.
The secret is to scoop the sides up into the middle of the pan as soon as you pour it in, creating that nice fluffy texture. Then once the bottom side of the eggs are cooked, fold it over and break it up.

I want to make french eggs/a french omelette because those are softer but it'll take much longer to do

Are you sure you posted the right video, KMB? Or am I supposed to sit through the entire 30 minute interview waiting for the bit where he mentions how he makes scrambled eggs.

you know, a lot of pro chefs seem to like their scrambled eggs real goopy like that, but personally i prefer mine a little more "solid". I would have left out the crem fresh (i dont even know what that is, looks kinda gross) and probably left it on the burner maybe 10-30 seconds longer. I'm not a better chef than ol' ramsey or anything but its just my personal preference.

For me it needs to have a little bit of texture to it. I make it like an omelette before breaking it up evenly.

Yeah, exactly. I actually made scrambled eggs this morning and I tried out some of his techniques. I made it a little goopier than I normally do, and I have to say, it was pretty good, especially mixed up with some salsa. But still nowhere near as goopy as he made. Anyway, I did pick up a trick or two, I may start making them a little goopier than I used to.
